Barbecue pt 2 – Courgette ribbon salad!

This has potential, but needs development, I think the dressing just wasn’t right… a good start though, and a new way to eat courgettes!


Make the courgette ribbons by peeling it with a peeler (don’t go too far into the middle of it though, or it gets soft), then toss with some sort of dressing (this is where the recipe falls down, because my dressing didn’t work – maybe a kind of tomato-ey pesto/pasta sauce type thing would work well, but then it wouldn’t look so courgette-y… and then sprinkle parmesan and herbs on top.
