Choccy brownies!

These should look a bit more squodgy, blame my new oven overcooking them. However, it’s a very good easy cheap brownie recipe which doesn’t require buying actual chocolate for them, which means having the stuff in the cupboard, yoohoo!!

Chocolate brownies

Makes 16, adapted from allrecipes

110g butter, melted

200g sugar – I use a mix of soft brown sugar and demerara sugar, caster is fine but a bit of brown makes it taste good, I think.

30-40g cocoa powder (like Bournville – worth the investment)

1/2 tsp vanilla extract

2 eggs

110g plain flour

big pinch baking powder

pinch salt

30g nuts – I usually use walnuts but this time around I’d run out, so it’s got hazelnuts in.

– Melt the butter in the microwave.

– Add the cocoa powder and mix in.

– Add the sugar, vanilla and eggs and whisk.

– Add the baking powder, salt, flour and walnuts, mix it all together, pour into a lined square tin (I finally now own a square tin, as there was an offer on in Asda – 2 packs of butter AND a square tin for £2, yes please!)

– Bake for about 20-30 mins (20 was too many for these, which is why they look way too cakey) at about 170/gas 4 (I have re-converted to a gas oven, not happy for my baking!) Test to see if they’re done by sticking a knife into the choc, and it should come out with a bit of mixture still on the knife (i.e. the opposite to cooking a cake :))

– Then leave to cool in the tin which helps them stay soft, lift the whole thing out, peel off the paper and cut into squares. Done!
