Christmas cupcakes

These are only really “Christmas” because of the decorations. You could just call them “carrot cakes with ginger icing”… but I think in December, we have a right to put the word Christmas in front of everything. So there.

This recipe is a bit of a mix and match from the Primrose Bakery cupcake book (which I will get around to reviewing at some point) that I got from the library a few weeks ago. It’s a cute little book but some of the amounts of ingredients in the recipes seems a little strange. This carrot cake was VERY moist. So much so that it did that going-greasy-into-the-wrapper thing after a few days, and I have a feeling from looking at the other recipes which seem to have a common basic mixture, that it’s missing some flour. So I will add it in, but only tentatively, to this version. Also, the frosting is lush. I suggest you arm yourself with a spoon and shut the kitchen door.

Carrot cupcakes

Adapted from “Cupcakes from the Primrose Bakery”

(Makes about 6, total cost 70p, per cake 12p)

110g carrots, grated

65g sultanas

1 egg

65g caster sugar

60ml oil

drop of vanilla extract

60 – 100g plain flour (see notes above)

1/2 tsp bicarbonate of soda

pinch of salt

1/2 tsp cinnamon

Beat the eggs and sugar together and add the oil and vanilla.

Sift in the flour, bicarb, salt and cinnamon into the mix.

Fold in the carrots and sultanas

Fill the cupcake cases to about 2/3 full and bake at 180c for about 25 minutes.

Leave to cool – and make the icing!

Ginger fudge icing

(I think this is the amounts I used… it should be just enough to top the 6 cakes)

45g butter

1/2 tsp lemon juice

1 1/2 tbsp syrup from a jar of stem ginger (I imagine ground ginger would work if you don’t have the syrup… but you’ll have to adjust the amount of liquid in the mixture. The syrup really is what makes it, though)

100g icing sugar

Beat all the ingredients together until you have a nice thick frosting, then spread on the cakes.

I decorated my cakes with bought royal icing Christmas decorations and crushed cherry flavoured candy canes 🙂 I think the one in the picture looks as though Santa is drowning :/
