Oh yah dahling, of course I make my own granola

Firstly, my Graze box arrived yesterday and it is cute. So cute, that I thought I’d put in a picture.

I heard about this through my pallys discussing it on Facebook. You get your first box for free, rate foods you don’t like, or ones you want them to send soon, and they’re lovely. As a huge bonus, the first box is free… a-woo-hoo! (I can’t really afford it otherwise, I will certainly be re-subscribing when I’m rich though). I got a dinky piece of olive focaccia, a mix of dries figs, apples and cranberries, 3 pieces of apple and cinnamon flapjack, and a mix of dried banana, strawberry and white chocolate buttons. YUM.

And as a second part to this blog, I made granola!! I am always a bit worried about buying those lovely cereals with clusters and fruit and things in. They’re massively high in calories, and sugar, and salt… and they’re also kind of expensive. So I thought I’d try and make my own… I have tried to work out the calories (not easy) and I don’t actually think it’s hugely different, but at least I know that what I’ve used, and I put tons of fruit and nuts in it. And for a breakfast-phobe, it’s really really nice… and for a snacking fiend, it also fills me up for absolutely ages. So it’s pretty fab, really. Ingredients I used

1 1/4 cups oats

1/3 cup flour

1/4 cup sugar

pinch of salt

1/4 cup butter

1/4 cup honey

nuts of your choice (I used chopped hazelnuts as I don’t actually like nuts that much… and chopped coconut and almonds)

dried fruit of your choice (I used dried bananas, dried apricots, sultanas, dried cranberries and dried apple (which I have now decided I hate… oops))

Melt the butter and the honey in a big bowl in the microwave. Mix in the oats, flour, sugar and salt. Then mix in the nuts that you’ll want toasting (i.e. almonds).

Cook in the oven on a tray, about 1/2in thick, at about about gas 4, watch it carefully, you don’t really want it to brown. Flip it after about 15 minutes and don’t worry if it doesn’t stay together, it needs crushing up later anyway.

When it’s all golden (don’t worry if it’s not hard yet) take it out and leave in the tray. Break up the big pieces into small clusters. Chuck in the fruit and nuts and stir it all up. Leave it to cool and the clusters will harden. Store in a airtight tub and eat with milk. Don’t be tempted to fill your bowl, if you’re generous with the fruit and nuts it is VERY filling. And lush.
