Chouquettes


These took three batches to get relatively good (the first batch going wrong because I put in double the amount of water…), and even then they were a little eggy-tasting. But never mind, I like the sugar I bought in France to put on them 🙂

Ingredients:

125ml water

125g flour

60g butter

pinch of salt

50g sugar

4 eggs

100g “Perles de Sucre”… chunky pieces of sugar which look like this http://storage.canalblog.com/12/79/757311/58476726_p.jpg (stolen from someone else’s blog)

Put the water, butter, sugar and salt in a pan.

Bring to the boil. Take off the heat and put the flour in.

Stir (vigorously) until there are no lumps, put back on the heat and stir until it comes away from the sides (although mine did this before I put it back on the heat).

Let it cool a little, and then mix in the eggs one by one, making a smooth batter.

Put it into a piping bag (or don’t) and put little amounts on a tray (they don’t spread loads so they don’t need to be really far away from each other).

Sprinkle with the sugar pieces.

Bake for about 20 minutes at 180 degrees.

Eat!
